The Chef

Executive Chef Yoshimitsu Kashiwabara

Chef Kashiwabara came to Hotel Metropolitan Edmont in 2004 after apprenticing at Japanese restaurants in Ginza, Akasaka, and elsewhere and working in nouvelle Japanese cuisine establishments.
He has been executive chef of the Japanese restaurant, Hirakawa, since July 2012.
Showcasing the inherent flavor of the ingredients, I love to serve our guests with dishes that have been prepared from the heart, from authentic kaiseki courses that highlight the myriad colors of the season, to many and varied à la carte offerings.
